Cabbage Pulao

I had made cabbage sabzi early in the week.Half of the 400 gm cabbage was leftover. I thought of making cabbage pulao. I googled & got many recipes of cabbage rice. I choose this recipe of Veg Recipes of India. I made a few changes. And of course, I made it in the cooker.


Ingredients : 1 cup basmati tukda rice, 1 tbsp oil, 200 gm finely shredded cabbage, 10-12 curry leaves , 1-2 green chillies roughly chopped, 1 tsp grated ginger, 1 bay leaf, 1 inch cinnamon stick, 5-6 peppercorns slightly pounded, 1 tsp cumin or jeera, 1 tsp dhania powder, 1/4 tsp red chilli powder, 1/4 tsp haldi, 1/4 tsp hing,juice of half lemon , salt to taste.


Method : Take oil in the pressure cooker pan. Heat the oil .Add ginger to it.Let it be nicely fried in oil.Add pounded peppercorns, cinnamon stick & cumin .After they turn fragrant, add shredded cabbage, curry leaves &  green chillies. Let it be nicely sauteed. Add haldi & hing. Mix nicely with cabbage & spices. Add bay leaf. Give all ingredients a good stir. Add rice. Mix all things nicely in the pressure pan. Add dhania powder & red chilli powder. Mix nicely with the ingredients in the vessel.Add salt. Mix nicely once again so that salt gets distributed all over. Add 2 cups water. Put on the lid of the pressure pan.Put on the whistle.Pressure cook for 2-3 whistles on high flame. Put off gas.Aftr it cools, put off whistle.After 10-15 minutes after whistle has been removed, open the lid. The cabbage pulao is ready. Sprinkle juice of half a lemon & mix with the fluffed up rice.

Serve cabbage pulao with roasted papad & raita.


My family were all praise for this mildly spiced pulao !

Hara chana nimona

Green garbanzo beans or hara chana are in season now. I had read about hare chane ka nimona on Sangeeta Khanna's  banaras ka khana blog.I felt, that, this nimona needed one try by me .



Ingredients : 1/2 cup + 1 tbsp  green chana, 2 medium potatoes,1 tsp cumin seeds, 1 tsp dhania seeds, 5-6 peppercorns, 1 small bay leaf, 1 tsp grated ginger. 1-2 green chillies, 1 tbsp oil,1/2 tsp haldi, salt to taste.


Method : Pressure cook the pototoes. After they cool, peel them & cube them. Keep aside.

Grind bay leaf, peppercorns, dhania seeds, cumin seeds into a powder. Keep aside.

Make a paste of 1/tbsp green chana, chopped green chillies & grated ginger.Keep aside.

In a kadhai , take oil.Heat it. Put 1/2 tsp cumin seeds .After they crackle, add the cubed & peeled potatoes followed by green chana .Add haldi & saute all nicely.Add the ground masala powder.Fry for a minute till it gets aromatic.Add the ground paste .Fry all nicely so that masala & paste is coating the green chana & cubed potatoes.Let it fry for 3-4 minutes. Throughout the kadhai cooking, keep gas on slow mode.Add a cup of water .Add salt.Pressure cook for 1 -3 whsitles .Put off gas.

Serve hara chana  nimona with rice and rotis.



Note : This nimona turned out  watery as I added more water ( more than 1 cup, I learned after I saw that the content was watery ).I should have made paste of 1/4 cup hara chana ( & not 1 tbsp hara chana ) with ginger & green chillies .The spiciness was just fine.So , if more spice is needed, simply increase the amout of red or green chillies & pepper & ginger. Alos ,I need to have added just one boiled , peeled & cubed potato instead of two.

Vegetable rich tahiri

I am an avid follower of Sangeeta Khanna on facebook. She posts her recipes & useful tips & tidbits on facebook under the caption Healthy Living with Sangeeta Khanna. Her tips, recipes & information have opened the world of food to so many like never before.....

I read about Tahiri pulao on Sangeeta Khanna's  blog. Tahiri is a mixed vegetable pulao from Uttar Pradesh. And I have been wanting to try it. She has a variety of Tahiri recipes on her banaras ka khana blog. And some days back , she had shared a mixed vegetable tahiri recipe .This is on her other food & recipe blog called healthfood desivideshi.  I tried it with some variations .Needless to add, I loved it !


Ingredients :3/4 cup rice (  used basmati tukda ) , 5-6 Cauliflower florets,1/4 cup  cauliflower stems cubed or cut into medium slices, 1/4 cup broccoli stems cut into medium slices, 1 tbsp peas,1/4 cup potato peeled & cubed ( optional ), 1/4 cup carrots cubed, 1/4 cup beans roughly chopped ( into half an inch a piece ) , 1 tbsp ghee, 1 tsp jeera,8 peppercorns , 2 cloves , 2-3 green chillies finely chopped, 1 inch ginger cleaned & grated, 1 tsp haldi, salt to taste.


Method : Heat ghee  a pressure pan on low flame..Add jeera.As soon as jeera turns aromatic, add the crushed pepper corns & cloves ( I crushed them in my small grinder jatr ...it can be done with pestle as well ).They will soon get fragnant. Add green chillies & ginger. Fry all nicely for aminute. Add all the vegetables except the cauliflower florets.Mix all nicely so that all spices & veggies get together. Add haldi .Mix all ingredients in pressure pan again.Add salt.Give the ingredients a stir so that salt gets mixed with all veggies.Add rice.Mix all the ingredients in pressure pan .Fry all for 2-3 minutes. Add cauliflower florets.Give the ingredients a  stir. Add water ( Added 1.5 cups water as rice was 3/4 cup ) .Stir everything for the final time. Close the pressure pan with lid.Cook for 2-3 whistles. Put off gas. After it cools. remove the whistle.After 10-15 minutes, open the lid & look at the Tahiri pulao ! It looks delicious. Serve with dahi , raita, papad, or vegetable salad or eat it just like that !

This rice was not at all spicy.So if you like it more pungent & spicy,please feel free to add more of spices ( cloves, peppercorns ) or green chillies & ginger or a combination of all as per your taste. Sangeeta Khanna has added quite a bit of spices, if you read her recipe.I use very little spices as I am used to  less spicy food.

Tomato Gojju

One of the food blogs that I  follow is Saffron Trail by Nandita Iyer.She is  a doctor by profession. The other day, she had posted tomato gojju recipe.I was tempted top make it as shes stated that this recipe is from Karnataka.I did make the recipe after asking my mom for the recipe.

The recipe became possible as there were quite a few small ( lemon sized ) tomatoes in the refrigerator.



Ingredients : 5/6 tomatoes  chopped  roughly, 1 tbsp chickpea flour or besan 1 tbsp oil, 1/2 tsp mustard seeds,1/ 4 tsp fenugreek or methi seeds,   1/2 tsp cumin, 1/4 tsp hing, 1/4 tsp turmeric, 1-2 byadgi mirchi broken into 2-3 pieces each, 1-2  green chillies chopped,  a few curry leaves, 1 tsp jaggery, optional : 1 tsp or less of sambar or rasam powder or any everyday curry powder ( being used for making daily vegetable ) , salt to taste.



Method : Heat oil in a kdahai.Add mustard seeds.After they splutter add methi seeds.After they pop up , add jeera.Next add curry leaves & byadgi mirchi followed by turmeric & hing.Add tomatoes & mix all ingredients in kadhai.Keep cooking on slow gas flame. After 10-15 minutes, tomatoes will become mushy.Take care that the tomatoes do not stick to kadhai bottom.Add salt  to taste.This will make tomatoes all the more mushy. Add jaggery. Mix nicely.After five minutes, add the curry powder or sambar or rasam powder or combination of all three powders . Mix. Take 1tbsp besan & mix it with little water & make apste with no lumps in it.Add it to tomato spice mix in the kadhai constantly mixing with the spoon as it is being added to the kadhai. Keep stirring the spoon in the kadhai till the besan paste has become one with the tomato spice mix.Add more water if consistency is too thick. Bring the mix to a boil Put off gas. Serve with rotis and or rice.


This is  very tangy dish.And very easy & quick dish to make.Besan is added to make it thick.In other versions, soaked chana dal- tur dal mix is ground with coconut to make the gojju thick in place of besan.

I added more curry leaves as I had many of them in stock. One can add more chillies and even more curry powder as per  taste.Or it can be without curry powder .Or it can be with curry powder & no green chillies. Instead red chilli powder can be used.

Mixed veggies stew : Rishi Panchami chi bhaji

My neighbor had shared with me years back this Rishi chi  bhaji. I simply loved it.And so was wanting to make it .Since Rishi Panchami comes once a year, only on that day ,can that veggies mix be brought conveniently in the city.

Last evening ,I went to market & forgot that the next day is Rishi Panchami ...it is the day after Ganesh Chaturthi.I went to market at around 11.15.One vendor told me to pick & choose.I went ahead. I spotted a Maharashtrian lady.She was selling Rishi Panchami veggies.I was thrilled that she will hand over me the mixed veggies & I just pay & come home & start cooking.Yet,she had just some veggies.Colcasia leaves or taro leaves or alu were missing.So also was lal math missing.The lady sitting next to her was selling green leafy veggies in bunches...alu leaves asa slo lal math.I requested her to give me 1-2 alu leaves & a small bunch of lal math.For a price, of course ! Mission accomplished, I moved to a grocer as the Rishi Panchami vrat needs a particular variety of rice to be cooked.I drew a blank.I decided that since I was making this stew just for my tast buds, I would have to make do with the rice at home.

Ingredients : 1-2 colcasia leaves or taro leaves or alu leaves washed & chopped, a tiny bunch of lal math ( Swiss chard ) washed &  chopped, 1 small piece of red pumpkin peeled & chopped, a small cucumber piece chopped,1-2  pieces of corn cob,4-5 big bhindis chopped, a small doodhi piece deseeded & chopped, 1 tiny karela deseeded & chopped, 1 small piece of shirali ( ridge gourd ) chopped, 1 small piece of goshali chopped  ( smooth gourd )  , some peas, some balck eyed beans from pods, etal ( The veggie vendor gave me a piece of avegetable which looked like a midget or tiny version of suran ...she told me to add it to the bhaji with other veggies .I roughly chopped it & pressure cooked with other veggies ), 1-2 green chillies chopped into 3 /4 pieces,1 teaspoon jaggery, 2 tsp tamarind pulp, 2 tsp ghee, salt to taste.



Method : I was in a hurry as I returned home at 12 noon.So I pressure cooked the veggiesincluding green chillies  for 3 whistles.



Take ghee in a kadhai.Add tamarind pulp .Add jaggery. Add salt to taste. Bring all to a boil.Add pressure cooked veggies.Let all the mixture come to a boil.Put off gas. Enjoy ! I ate this bhaji with rice. It will go well with chapatis as well.


My maid, whom I served this bhaji ,felt that I had simply boiled the veggies ! When I revealed that I had added jaggery , tamarind & ghee, she said it did not taste that it contained all that ! I guess, I added too little of the ingredients to maintain the subtelty of Rishi Panchami.Next time,I promise to add more of the ingredients !

Paneer butter masala

I wanted to try a new paneer dish as my kid loves paneer .I came across this paneer butter masala here.I made some changes as my kid eats less spicy foods.

Ingredients : 100 gm Amul paneer cubes,2 small tomatoes,1 tsp grated ginger,1/2 tsp chilli flakes,5-6 cashewnuts,1/4 tsp garam masala powder, 1/4 tsp turmeric,1/4 tsp hing,2 tsp oil,2 tsp Amul butter salt to taste.

Method : Take butter & oil in a kadhai.After the butter melts,add grated ginger.Fry it in the oil butter mix.Meanwhile puree the tomatoes in a blender with 1 tsp chilli flakes ( red chilli powder can be used as well ).Pour this blended tomato mix into the kadahi.& fry nicely.Add one bay leaf to the kadhai & mix so that the tomato gravy is covering apart of the bay leaf.Let this mix boil.

Cut the paneer cubes into smaller size if needed.

After the tomato puree has boiled, add turmeric & hing.Mix nicely.Meanwhile take 5-6 cashews & powder them in the mixture.Add this powdered mixture to the kadhai.Add the cashew mix to kadhai after the raw tomato smell disappears ( this means boiling tomato puree for 10-15 minutes ).Mix powdered cashews nicely with gravy.The gravy will start becoming thick.Add half cup water or less if thicker gravy is needed.Add salt & garam masala.Mix nicely.Add paneer cubes & bring the whole thing to a boil.Let it simmer for 5 minutes.Then put off the gas.Serve with chappatis.




My kid found the garammasala too much.So next time,I will put just 1/8 tsp of garama masala per 100 gm of paneer for this  dish.Moreover,she loves paneer cubes & gravy is simply discarded.So it must be semi dry or thick gravy.

Carrot salad

My mom is very partial to this salad or gajri ( Kannada for carrot ) kosambri ( salad ).Only a seasoning has to be added to grated carrots along with salt & it is ready ! Amma makes this as an accompaniment to methi theplas.

Ingredients : 3 medium sized carrots...peeled & grated,1 tbsp oil,1/4 tsp cumin,1/4 tsp mustard,1/8 tsp haldi,1/4 tsp hing,1 byadgi red chilli broken into 2-3 pieces,1 green chilli finely chopped, a few curry leaves,salt to taste.

For garnish : 2  tbsp cleaned,washed & chopped coriander leaves,2 tbsp fresh grated coconut( optional ).

Method : Take a kadhai & heat oil.Add mustard seeds.After mustard seeds pop up ,add cumin followed by urad dal.As urda dla turns golden brown in colour,add curry leaves & green chilli pieces.Put off gas.Add byadgi mirchi.Add hing & haldi.Mix all this with a spoon.Add this to grated carrots in a bowl.Mix nicely Add salt.Mix nicely so that salt gets evenly distributed.

Garnish with chopped dhania & fresh coconut.Serve with methi theplas and or any pulao,biryani, et al  !
