Eggless Pear Upside down cake

I wanted to make this cake from the day I glanced at  gluten free version of pear cake on  "My diverse kitchen" .I finally brought one single pear & made this cake a week ago.It turned out too good to my surprise !

I was inspired by http://priyaeasyntastyrecipes.blogspot.in/2011/01/eggless-pear-oats-upside-down-cake.html

I changed the recipe a bit.

Ingredients : 1/4 cup jowar atta,1/4 cup raagi atta,1/4 cup oats,a little less than 1/4 cup maida & another little less than 1/4 cup corn flour,1/2 tsp baking soda,1/2 tsp baking powder,a pinch of salt,1/2-3/4 cup jaggery sugar ( I have given this amount as little more than 1/2 cup was enough for my taste),1/2 cup dahi or curds,1/2 cup boiled water,1/4 cup oil,2tsp vinegar ( I used simple colouless vinegar as I don't have apple cider vinegar).

Method : Mix all the dry flours together in a bowl.Add baking soda ,baking powder & salt to the flour mix & mix nicely with spoon or fork many times.Keep aside.

Mix curds, oil, vinegar & sugar in another bowl..Dissolve sugar so that no lumps of sugar remain.Make aeell in the flour mix & pour the liquid mix of oil, vinegar & curds.Mix nicely. Now add boiled water till no lumps remain & a drop down consistency batter is obtained.Keep aside.

Take a microwaveable vessel & line it with butter paper.Place thinly cut slices of pear on the butter paper in any pattern that you like.Pour the batter over the pear slices.Bake in microwave for 8-9 minutes. My cake came out perfect in 8.5 minutes.

Let it cool in microwave for 10 minutes. Then take out the cake & let it cool for 15 minutes. Then put the microwaveable vessel with cake upside down on to a plate. The cake will drop down on plate.Check if the cake has cooled. Then cut into desired pieces &  serve.

My cake was little crumbly -so next time around ,I will put only 1 tbsp of corn atta.

Instant raagi oats idli

I recently came across this recipe on the net.The copy right of the recipe is with http://www.veginspirations.com/search/label/Idli%20varieties

I made one change - that was, in using eno fruit salt instead of baking soda.

The quantity of ingredients used yields 16 medium sized idlis.

Ingredients : 3/4 cup coarsely powdered oats,3/4 cup fine lapsi rava(roasted),1/2 cup raagi ( nachni ) flour,1 tsp eno fruit salt,2 cups dahi & salt to taste.

The dahi & the raagi-oats-rava mixture has to have 1:1 proportion -hence,2 cups dahi as this dry mixture will measure 2 cups.

Seasoning : 2 tbsp oil,1/2 tsp mustard seeds, 1 tsp chana dal,1 tsp urad dal,1 sprig of coriander leaves ( cut finely or whole ),1-2 green chillies( optional )finely cut.

Method: Mix the coarsely powdered oats ,lapsi rava & raagi flour.Add 2 cups dahi & mix thoroughly. Now add salt & eno fruit salt & mix vigorously.Add water if there is need. The mixture must be of idli batter consistency.

Take the 2 tbsp oil in a pan & heat it. Now add mustard seeds. After they splutter add chana dal followed by urad dal. After the dals have changed color slightly, put off gas.Add coriander & green chillies.Add this seasoning to the idli mixture prepared.

Now grease the idli moulds & pour the idli mixture into the moulds.Steam the idlis for 8-10 minutes. Your idlis are ready to be savoured !

This recipe is excellent for diabetics as it has no rice & has raagi & oats.Raagi is a good souce of calcium & oats help in controlling cholestrol.

Raagi dosas

I had this leftover dosa atta ( it was more than 10 days old ).It was nearly one cup.I added 2 cups ragi atta ( nachni in Marathi) to this dosa Atta.By mistake I added more water. The consistency was watery -unlike dosa atta.
Then I added  grated ginger , jeera & also salt ( to taste). Then I poured two three ladles of the atta on the non-stick tawa.I did not spread it as the consistency was watery.I got the most fluffy dosas -full of calcium !

Ingredients-1 Cup leftover dosa atta,2 cups ragi atta, add water to get dosa consistency, add 1/2 inch ginger grated ,1 teaspoon jeera& salt to taste.Remember that there is already salt in the leftover dosa atta.
Method : Now heat a non-stick tawa & spread a ladle of the atta on the tawa.If it is watery, don't spread the atta.Just put blobs of atta near to each other so that they flow & join each other. After the side is cooked, apply a little oil on the uncooked side & turn it over. Then after a minute or less, take it off from the tawa.Your raagi dosa is ready to be eaten !

Tip You can also add grated carrots, onions, green chillies, curry leaves & coriander to the atta to make it more healthy.
