Carrot salad

My mom is very partial to this salad or gajri ( Kannada for carrot ) kosambri ( salad ).Only a seasoning has to be added to grated carrots along with salt & it is ready ! Amma makes this as an accompaniment to methi theplas.

Ingredients : 3 medium sized carrots...peeled & grated,1 tbsp oil,1/4 tsp cumin,1/4 tsp mustard,1/8 tsp haldi,1/4 tsp hing,1 byadgi red chilli broken into 2-3 pieces,1 green chilli finely chopped, a few curry leaves,salt to taste.

For garnish : 2  tbsp cleaned,washed & chopped coriander leaves,2 tbsp fresh grated coconut( optional ).

Method : Take a kadhai & heat oil.Add mustard seeds.After mustard seeds pop up ,add cumin followed by urad dal.As urda dla turns golden brown in colour,add curry leaves & green chilli pieces.Put off gas.Add byadgi mirchi.Add hing & haldi.Mix all this with a spoon.Add this to grated carrots in a bowl.Mix nicely Add salt.Mix nicely so that salt gets evenly distributed.

Garnish with chopped dhania & fresh coconut.Serve with methi theplas and or any pulao,biryani, et al  !

Eggless Carrot cake in Microwave .

I tried this cake 2 times earlier .They came out fine.This time, though ,it turned out superbly !

I made a few changes & my recipe is as under.

Ingredients : 1/2  cup whole wheat flour ( I used Pillsbury brand ),1/4 cup quick oats,2 tbsp corn flour,5 pistachios,5 almonds,5 hazelnuts,1/2 cup sugar,1/2 tsp baking powder,1/4 tsp baking soda,1/2 cup grated carrots,a pinch of salt,1/2 tsp vanilla essence,1/4 cup oil,1/4 cup curds or dahi ,water to adjust consistency of batter.The dry fruits are optional.

Method : My small jar of mixer is quite big & so I took the oats & the dry fruits ( pistas,hazelnuts & almonds ) & powdered them at one go.I used dry fruits as my daughter does not eat them otherwise.Even adding them whole or big pieces to the cake batter will make her avoid the cake.One can add them whole if it is fine to consume cake pieces with whole dry fruits.I forgot to add a piece of cinnamon while powdering this oats -dry fruit mixture & hence my cake is without cinnamon.

Sieve the whole wheat flour ,corn flour,oat flour ,dry fruit mix along with sugar,baking soda & baking powder.Keep aside.

In another vessel ,take oil ,add vanilla essence & dahi .Mix.Pour this mix, into a well, made in the dry ingredient mix.Mix till no lumps remain.Now add carrot & mix again. .Add water to adjust the cake batter consistency.The consistency has to be just a little more than drop down consistency as I bake in microwave.

Take a microwaveable vessel & line the bottom with butter paper.Now pour the cake batter into the vessel -on to  the butter paper lining the bottom of the vessel.Tap the vessel sides ,after the batter has been poured to release any air bubbles.

Bake in microwave for 8 minutes.Let the vessel be standing in the microwave for 5 minutes after it is switched off as the cooking continues.Take out the vessel using cotton padded gloves .Use a toothpick or knife to check .If the toothpick or knife comes out clean after poking it into the cake ,then cake is ready.Allow the cake to cool.After 15-20 minutes,put the vessel upside down on a plate. The cake will drop down on the plate.Allow it to cool further.Then remove the butter paper sticking to the cake bottom.Cut into desired shapes & serve.


My neighbour complimented, "This is the best cake, made by you, so far ."

Kadhai Gobhi

I had sent in this recipe to HT cafe & it was in the weekly column "Ghar Ka Khana" on 16th April,2009.

Ingredients:250gm cauliflower cut into medium sized florets,2 carrots diced,6 beans cut into 1/2 inch pieces,1 small bowl of peas,1 large capsicum diced,1 medium sized tomato diced,1/2 inch ginger grated,1 large green chilli cut into 1/2 inch pieces,1 tbsp dhania powder,1 /2 tsp pepper powder,1 tbsp oil for cooking,1/2 tsp turmeric,1/4 tsp hing,salt to taste.
Method : Heat oil in the kadhai & add grated ginger & green chilli pieces.Then add cauliflower florets,carrots,beans & peas.Add turmeric & hing.Keep a plate filled with water on the kadhai whilst the veggies are getting cooked.Add a little water to the veggies in the kadhai to cook the veggies after 5-10 minutes of cooking.Once the veggies are tender,add capsicum.After 2-3 minutes add tomatoes followed by dhania powder,pepper& salt.After 5 minutes ,put off the gas.Garnish with coriander.

This is a sabzi wherein you can add aloos  & pyaaz also if you wish.

Gajar halwa

I made this recently.I used to take out the malai from cow's milk which I buy daily.It is very little.I collected the malai for a week & kept it in the freezer.

I got four carrots ( available in winter ).They are, what I would call bharatiya gajar.Not the Chinese type which is available all the year around.

Ingredients:4 gajar,1 tablespoon ghee,1 medium bowl collected malai,1 medium bowl sugar,10 almonds,10 cashews, kishmish & cardammom ( 2 pods ).

Method : Grate the gajar. Heat the ghee in kadhai.Now add the grated gajar,malai & sugar & mix with a ladle.Keep on slow flame.After every 5/10 minutes,keep mixing.It will start getting watery.Let it cook.Powder the cardamom.Add kishmish & cardamom  powder. After 20 minutes,it will become dry.Put off the gas.Garnish with fine pieces ( grate the almonds & cashews) of almonds & cashews.

This is almost fat free gajar halwa as the malai  used has hardly any  fat .Hence,very healthy !
